On a recent trip to Kauai, my wife and I stopped by the expansive taro fields on the north side of the island. It was so interesting to learn that the taro plants grow underwater and thrive in very wet, humid climates. You were able to see the farmers moving from one section to the next, picking the taro plants each by hand. The backdrop of these particular taro fields was simply beautiful and almost felt like I was looking at a painting.
